As for the flash, I never get red eye with an external on my 35mm Nikon. And I once used an Olympus with a pop-up flash for a few days, and no red eye either.
I haven't played with the Z1, but I am partial to Minoltas :) and people do say it is reasonably quick. If you like the idea of huge zooms and can spend a bit more, I think the Panasonic FZ10 with a stabilized Leica 12x zoom lens (35-420mm equivalent, 2.8 constant throughout the entire zoom range) is a tremendous camera.

No, usually RAW needs to be converted to JPG before you can do anything with it.

Yikes, sorry, gave you wrong info. Usually every manufacturer's RAW implementation is proprietary, so you'd need to process it with their software BEFORE converting to JPG (or another format). For some RAW formats (don't know about Canon) Photoshop plug-ins are available. The advantage of shooting in RAW is that you have complete control over things like sharpening, white balance, saturation, etc., which if you shoot in JPG are done in camera.
